So sorry about the dry spell. I guess having a newborn baby will do that to you! And while he's technically not really a newborn anymore (almost 3 months!), I can still use that as an excuse, lol!
Here's a little something to tide you over until I can pull it together and post about that baby:
Morning Glory Muffins
2 c. flour
1 1/2 c. sugar
2 tsp. baking soda
2 tsp. cinnamon
1/2 tsp. salt
2 c. grated carrots
1/2 c. raisins
1/2 c. shredded coconut
1/2 c. chopped pecans
3 eggs
1 c. vegetable oil
1 apple, shredded
2 tsp. vanilla extract
Preheat oven to 350. Grease 24 large muffin cups (we lined with paper). Mix flour, sugar, baking soda, cinnamon, and salt in a large bowl. Stir in carrots, raisins, coconut, and pecans.
Combine eggs, oil, apple, and vanilla in a medium bowl; stir well. (We whisked this)
Add egg mixture to flour mixture; stir just until combined.
Spoon batter into prepared muffin cups. Bake until a toothpick inserted in center of muffin comes out clean, about 15-20 min.

Things just worked out that I happened to have all the ingredients on hand. Some old carrots, pecans in the freezer, etc. But, they were delicious! Don't let the ingredients throw you off - I challenge you to use them all!
